Fruit Custard Tarts


This Fruit Custard Tart dessert can be done within 20 minutes. Pretty easy and simple! My lovely daughter has a sweet tooth. Whenever she wants to eat something sweet after dinner, I’d cook this dessert for her if I don’t have much time to prepare something else which is more sophisticated. Kiwi fruit and strawberry are in season in Australia right now. I can get many of them from grocery stores at a very good price. Here I used them to bake these yummy fruit custard tarts.

Chicken Wings in Thai Sauce


Many Chinese families, just like us, love eating chicken wings. There are hundreds of thousands of cooking chicken wings methods. No matter how we cook the chicken wings, the dish would be very delicious. And I also have tried a variety of cooking methods to please my family, especially my daughter. This time I used Thai sweet and chili sauce. The sweet, sour and spicy flavors blend perfectly together to make a unique sauce that is so great for dipping the pan-fried chicken wings. Truly, it’s very delicious. If you use fried chicken breast, this Thai sauce will also match wonderfully.

Pork Chops with Lemongrass (Vietnamese style) 香茅豬扒


Before moving to Australia, I seldom have had any chances to try Vietnamese foods. Luckily, we have many gorgeous Vietnamese restaurants that provide authentic Vietnamese cuisine here in Australia. One of their famous dishes, Pork Chops with Lemongrass(香茅豬扒)is my daughter's favorite. Vietnamese people love blending many spices and herbs together to cook unique tasty foods. Fish Sauce is very commonly used, that brings up the flavor of pork chops. If you dine in any Vietnamese restaurants, you must try and don’t miss it. Maybe you can cook for yourself at home. This is a great recipe with lots of Asian flavor that you won’t be disappointed for sure. For best results, use thin pork chops to pan fry.

I grew up with this simple homey dish, tomatoes with eggs, that my mum always cooked to feed us with a bowl of steamed rice. It's quick to make and very delicious.

In Chinese cooking, tomato is commonly used to cook with eggs. This dish, Tomatoes with Eggs, is both nutritious and delicious.



My kids would eat more rice when this dish is on table. Tomatoes have been shown to be helpful in reducing the risk of prostate cancer, breast cancer as well as preventing from heart disease.



Tomato is a very good and healthy food. So, I would cook tomatoes twice or three times a week for my family.

This Teriyaki Chicken recipe was recreated after trying so many times at different Japanese restaurants. My family loved this dish so much and praised it's just like the one we tasted in a nearby restaurant. It's so easy to make within minutes.






Japanese cuisine is always on our family’s menu. Having tried to cook this Teriyaki Chicken, my dear daughter commented that it just liked the ones she enjoyed in Japanese restaurants. Well, I was thrilled when hearing this comment.



You probably share the same feeling with me when our loved ones like and appreciate what we cook for them. Indeed, it’s a big reward. That’s all what I aspire to achieve in cooking.



I didn’t use the ready-made teriyaki sauce, but just some mirin. Mirin is a wonderful ingredient in Japanese cuisine.

Chicken Fillets in Tomato and Dijon mustard Sauce 茄芥汁配香草雞扒


I can’t wait to share this chicken fillets recipe with all my readers because the taste of them is very unique and sensational. My lovely daughter asked me to cook this dish for her repeatedly. I got thumbs up at the first time of serving this dish on our dining table.



Both tomato ketchup and Dijon mustard are very popular in cooking. But blending these two sauces together will make a big difference in taste that you’ve ever imagined before.



As for mustard, I love Dijon mustard very much as it’s not too hot but with a very special flavor. In addition, the rosemary and basil are very good “friends” in boosting up the flavor of chicken. It’s so yummy that I couldn’t wait until the dish is completely prepared. I ate one small piece of chicken fillet at the minute I finished cooking. Shhhh…..

Traditional Pumpkin Soup


Pumpkin soup is my family's favorite. Here in Australia, we can easily get beautiful pumpkins at a good price. My Aussie mates call it butternut pumpkin, but my American friends call it butternut squash. I think they are talking about the same delicious food, anyway. Every time I cook pumpkin soup, my family will always feel they don’t have enough.



Ingredients:

  • 500gm pumpkin

  • 1 white onion (finely chopped)

  • 600ml chicken stock (or water and chicken stock cube)

  • 25gm butter

  • 300ml hot milk

  • pinch of allspice

  • salt and pepper, to your taste

  • parsley for garnish



Traditional Pumpkin Soup Procedures


Method:

  1. Peel pumpkin and cut into 5cm chunks.

  2. Melt butter in a large saucepan and gently fry onions for 10 minutes or until onion is soft. Pour in chicken stock and bring to boil. Add pumpkin chunks to stock and simmer until tender, (about 30 minutes). Let cool down a bit.


  3. Puree in a food processor and return to pan, add hot milk, allspice, salt and pepper to taste and heat gently. Serve hot with lightly sprinkle chopped parsley or cream as desired.

Chicken is very popular in any kind of cooking and always on my family's menu too. Yet I grilled organic chicken drumsticks the first time. Having seen the show of Jamie's Fowl Dinners on TV, I really wanted to try organic chickens. Wow, I can’t describe how wonderful the taste of organic chickens, so different from the ones that packed in cages. They cost a few dollars more, but worth for trying for the sake of our health. Drumstick is the less fatty part of a chicken, costing much less than the chicken breast.

A few days ago, I went to a Chinese restaurant and saw their chef’s recommended menu posted on their wall. The words of “Curry Pork Fillet Burger” really caught my eyes. It sounds great. What a lovely combination of curry and burger! However, I guess 6 AU dollars might be too much for a burger. Why can’t I try to make some to feed my family?



Coincidently, some pork scotch fillets were on special offer at the nearby supermarket. Well, it’s a good time to have a go for it.

I believe that many people including kids and adults like fried rice. I, myself, like it very much. Not only does it taste good, but also it’s easy and handy to cook. I can add whatever ingredients I like. Best of all, it helps to clear away any leftovers in my refrigerator.



Whenever my mother had to work late, my father would fry rice for us. It’s very delicious. I took it as a treat as my mother normally did the cooking for the family.

Braised Pork Chops with Onion洋蔥豬扒



This Braised Pork Chops with Onion (洋蔥豬扒) is very easy to cook. All you need is to have pork chops and onion. Then you can cook this dish within half an hour. Best of all, the sweet and sour sauce is perfect for a bowl of steamed rice.



Ingredients:


  • 250 gm boneless pork chops

  • 1 small onion, shredded


Marinade:


  • 1 tablespoon light soy sauce

  • 1 tablespoon Shaoxing rice wine

  • 1/8 teaspoon salt

  • 1/2 teaspoon sugar

  • 1/2 tablespoon corn flour

  • a dash of sesame oil

  • a pinch of pepper


Seasoning:


  • 3 tablespoons water

  • 1/2 tablespoon tomato ketchup

  • 1 teaspoon light soy sauce

  • 2 teaspoons sugar

  • 1/2 teaspoon Worcestershsire sauce


Method:


  1. Rinse and dry boneless pork chops, then slice into pieces if you like. Tenderize pork chops with the back of a chopper and blend in marinade. Leave for 15 minutes.

  2. Heat 3-4 tablespoons oil to fry pork chops till both sides are golden. Remove and drain excess oil.

  3. Heat 2 tablespoons oil to sauté shredded onion until light brown. Pour in seasoning mixture. Put in chops again, and stir fry till sauce lessens. Dish up and serve hot.

Most Chinese restaurants have baked Cha Shao Bao available as dim sum (點心). The BBQ pork inside the buns is so juicy and succulent. You can’t miss it if you haven’t tried it before.
